Roasting food on a wood plank over fire is a time-honored tradition, arising from Northwest Coast Native American cooking techniques. Salmon was the original food of choice for planking. Whole sides of succulent fresh fish were placed on a slab of cedar wood and slowly cooked, propped over the hot smoke of a log fire.
